Homemade Lemon Curd
3 dl water
1 dl sugar
4 tbsp cornstarch
5 tbsp lemon juice
3 egg yolks
2 tbsp butter
Mix water, sugar, cornstarch, lemonjuice in a pot. Stir as you bring it to a boil. Remove the pot from the heat. Separate the eggs, carefully stir the yolks into the mixture. Gently heat the mixture while stirring, but do not boil. Blend butter into it. Let the curd cool, and serve with for example sponge cake or pancakes. (or eat it out of the pot with a spoon, yummy! :D)
Sounds scrumptious. Might make it with a sponge cake... mmm... yummy!
